Cocoa Cake with Apricot & Craisin-Cognac Topping and Walnuts

Cake:

  • 2 1/3 cups flour
  • 2 1/2 tspn baking powder
  • 3/4 tspn salt
  • 3/4 cup sugar
  • 1 stick soft butter
  • 3/4 cup milk
  • 2 eggs

Chocolate glaze:

  • 4 tbsp milk
  • 4 tbsp sugar
  • 2 tbsp cocoa powder
  • 2/4 cup butter

Dried Apricot & Craisin-Cognac Topping:

  • 1 cup dried apricots, chopped and craisins
  • 2/3 cup cognac
  • 1/4 cup water
  • 2/3 cup sugar
  • 1 tspn lemon juice

At the end add dried apricots dipped in chocolate glaze and walnuts with the design that you desire. Enjoy this decadent Fall dessert.
